Wednesday was fun and easy...pancakes and sausage for breakfast, cheese quesadillas for lunch, and Migas for dinner! YUM!
Migas for 2:
4 eggs, scrambled
1 plum tomato, chopped
1/4 onion, chopped
1/2 jalapeno, chopped (optional)
1 corn tortilla, torn into bite size pieces
1C. shredded cheese
In a small skillet, cook tomato, jalapeno and onion until onion turns clear.
Add in tortillas and cook 1 more minute.
Add in eggs and scramble all ingredients together.
Top with cheese and serve with tortillas! :)

If my plans work out, this is tomorrow's lunch. It is a good combination and I like everything in it. I am taking bets, hubby will love it.
We had this for supper tonight. This was a lifesaver and money saver as we were discussing getting takeout. Oh my yummyness! We all raved over it. I did use flour tortillas, because that is what we had. I made the kiddos with banana peppers and we had jalapeno.
